It's crazy how we can have cinnamon and nutmeg but not tonka beans. I really need to find some of these things I love your description of them. Great read as always!

Check local spice shops! In London there's an actual shop called the spice shop but otherwise check online as well

Love love love Tonka bean! It’s my favourite spice to use with rhubarb. Have yet to try it with apricots but have a bowl of apricots in my kitchen right now and that Tonka Apricot Jam of yours is calling my name!
