I’m Vietnamese Australian and I grew up eating a lot of Vietnamese food. Apart from just eating it raw (like in your TikTok!) one of my favourite uses of tamarind is making ‘canh chua’ which is a Vietnamese sweet and sour fish soup. It has fresh fish, tomatoes, pineapples, okra and Vietnamese herbs, and uses tamarind in the broth to help create that balanced flavour. You’d love it!
I’m sure there are variations of this across the world but you can deseed the fresh tamarind and mix with sugar, salt and chilli as a snack too.

LOVE sour tamarind! To my knowledge Iranian Ghalieh Mahi is typically a stew. It also comes in lavashak (fruit leather) form!
