After this wonderful trip, I really wanted to incorporate rooibos into a condiment. I had a phase of making my rice in rooibos tea and then sprinkling it with cinnamon and a dash of vanilla extract* but I had never โcondimentedโ it. My thinking cap came on and I thought of all the ways in which I like to drink rooibos.

When drinking rooibos midday, I prefer it simple with a squeeze or lemon. If itโs the morning and I want a cozy milky beverage, I opt for a red cappuccino (rooibos cappuccino) or with just a splash of milk. Wait, should I try and make a rooibos custard? perhaps a rooibos milk tart? a lemony jelly? Hmโฆ and then it hit me: rooibos lemon marmalade.
Overall, Iโm not a huge fan of citrus marmalade. Thereโs something about orange that just doesnโt sit well with my taste buds when added to other flavors. However, I tested out a lemon mint marmalade this summer and adored it - so why not test it out with rooibos?
