Tomato Chutney

I have spent the past few weeks surrounded by hundreds of tomatoes, a true luxury that I will never complain about. When faced with such bounty of goodies, I evidently have to test out 100 recipes…

This year I made tarte tatin, tomato sauce, candied tomatoes, canned tomatoes, tomato water jelly 4 ways, tomato sorbet, tomato vanilla basil jam and daily tricolor tomato salads. Let’s just say with fresh garden tomatoes, they were all 10/10 hits.

Although you’ll need to wait until The Condiment Book is released to receive the famous Tomato Vanilla Basil Jam recipe, I wanted to share with you my quick and easy chutney recipe.

The most frustrating recipe step in a chutney is the waiting period. Usually, a great chutney should sit in a dark, cool place for a few weeks so that the flavors can blissfully combine and get to know each other. This tomato chutney, however, is a speedy cheat the system chutney - there is no need to wait! The entire process, from chop to glossy spoonful, can be done within 45 minutes if not sooner.
