Peach Lemon Verbena Jam
Fruit + herb = dream combo. If well paired, when combining these two types of ingredients you not only maximize their individual tastes but also create potential for addictive flavor.
When I was little, I would drink a decaffeinated peach lemon verbena tea whenever I was France. Although I can no longer find those tea bags in stores, it taught me that stonefruit and lemon verbena work wonderfully together. I’m partial to using yellow peaches when using the herb, whether in a jam, sorbet or crumble but feel free to deviate if you’d like!
Although jam can feel too sweet and sticky on hot summer days this jam does NOT. While the yellow peach is sweet, the lemon verbena aftertaste is refreshing and almost feels cold?? It gives off the same feeling as chugging cold water with a piece of mint gum in your mouth. You know what I’m talking about right? It’s one of my favorite summer jams.
