Although I had never heard of it before, cramaillotte, or dandelion jelly in English, is a jelly made with steeped dandelions. It’s also known as Miel de Pissenlit in France, dandelion honey, as the flavor is quite similar. Personally, I found it to taste like a very delicate Manuka honey as it has that same slightly herby, barley-like aftertaste. It also reminds me of the soft sweetness of chamomile. It’s a manuka x chamomile calm jelly?
I’ve currently been loving a dollop of it in hot water throughout the day when working to keep me *sane*.
Although it’s a tad more labor-intensive than making regular jam, it can be done in a day and is so worth the time. I also just love that a common weed can be condimented!
