When you travel somewhere with your two best friends, you’re destined to love the trip regardless of where you are in the world. The first time I went to Galway, I was with my two friends Kathryn and Nicola and let’s just say we had a time and a half. It rained, it poured, we got stuck in a wind storm but we also had perfectly crisp pints of Guinness, fresh oysters, and of course, a spice bag. Not only did I have a blast because we were together, but I also fell in love with this Irish city due to its charm, live music, and local ingredients.
Flash forward a year and I receive a goodie package from Grá Chocolates. As someone who feels kind of meh about chocolate, I was blown away by how addicted I became to their treats. The ratio of chocolate shell to filling, the unexpected flavors, pairings, the quality and the not-too-sweet taste combinations left me craving more.

With my upcoming book, The Condiment Book, coming out this September I really wanted to collaborate with an Irish brand on a flavor punch. The first one that came to mind was Grá Chocolates so I crossed my fingers (and toes) and pitched collaborating on a chocolate together. They quickly responded to my email with “A chocolate?? Let’s do a full box collab!” - that’s it, I’ve peaked. They invited me to their factory this to test out our flavor ideas and to design the box - little did I realize they were based in Galway… That’s when I realized I had never sent out a city guide!
