We all know someone who is addicted to mayo and someone who despises the condiment. I like to call this mayo my “gateway” mayo because even people who don’t think they like the glossy condiment have enjoyed this one every time I’ve snuck it into a sandwich, wrap, or make a scrumptious chicken salad with it.

The Recipe
As you’ll see below, this recipe deviates from my usual dijon mustard + lemon juice + olive oil mayo combo. While that recipe is my favorite for your every day mayo (page in The Condiment Book), I like using a “blander” oil if I’m sweetening it.
