In September 2023, I flew to Copenhagen to dine at Noma. This had been a dream of mine since high school and I finally was able to get a reservation during vegetable season. As forerunners in the fermentation space, Rene Redzepi and David Zilber expanded my palate and interest in cooking so I could not wait to try the menu.
