We are in prime corn season so it would simply be WRONG not to share an entire corn newsletter with you. Below you’ll find recipes for sweet summer corn syrup, corn milk, corn cob jelly, and corn ice cream as well as fun and unexpected pairings.

Corn is EVERYTHING in the sense that it’s a fruit, a vegetable, and also a grain. Botanically speaking, corn is technically a fruit because it has seeds and comes from the flower of the corn plant! However, when used fresh in cooking we usually think of it as a vegetable… Oh but we also use corn as a grain - think popcorn, cornmeal, cornstarch, corn flour etc.

When eaten in its prime season, corn is so flavorful and reminds you just how special it is with every burst kernel. It’s overwhelmingly sweet and pairs with so much from sweet to savory. It’s a BBQ must have, the perfect counter balance to candied jalapeños (page 60 in TCB) and a really fun ingredient to play around with.

Summer Corn Syrup

Last week I went out and bought both fresh and canned corn to experiment in my kitchen. Since I had already made corn jelly a few years ago, I knew I wanted to create something new and a bit more versatile that I could use in savory food, sweet food, and in alc and non-alc drinks. Please welcome, summer corn syrup.

I’ve used this syrup in my morning matcha, corn clafoutis, corn jalapeño ice cream, and even in a samp + bean curry mish mash moment.
