Since Mercury is in retrograde for just over another week (April 1-25), instead of blaming my current problems on the planet, I’ve decided to embrace it. I mean, what better way to do so than by making jam? I had the pleasure of traveling to Wales this week and being hosted by the team at Halen Môn. As a token of my appreciation, I also really wanted to bring them something homemade so clearly jam was on my weekend agenda.
I vividly remember the first time I saw Mercury as a child, I found the color to be absolutely astounding, I couldn’t believe it was real. A true core memory! It quickly became my second favorite planet (after Pluto which I refuse to believe is no longer a planet). Since Mercury is the closest planet to the sun, it can be seen by the naked eye. Every summer in France as the night falls, I stand outside on the lawn with my family and we stare at the planet for nearly an hour nightly. So soon I can’t wait!
This is a double whammy Mercury appreciation jam. In celebration of Mercury’s bright red color, I present you with a vivid red jam. In celebration of the man
y surprises in store when Mercury is in retrograde, I’ve added in some pomegranate seeds - sour, crunchy, tangy and unexpected. This got me thinking that maybe all mishaps this month weren’t so bad after all? We experience, we pivot, we learn, we grow and we move ON.
Speaking of moving on, let’s get into the recipe.
